Sweet Corn & Quinoa with Honey Lemon Vinaigrette

As promised, I got my butt back in the kitchen and made a new dinner for me and Scott – hooray! I knew quinoa was on the menu because my mother-in-law gave us a nice big bag of Trader Joe’s Tricolor Quinoa. I really love that stuff. It’s so nutty and filling, and I just love the natural taste of quinoa. Have you tried it? It’s a little creepy looking at first, but I promise it’s delicious. Plus it’s packed with protein!

This quinoa recipe is per-fec-tion. It combines the fresh tastes of summer with the earthy taste of quinoa for the perfect light comfort food dish. Yes, that does exist!

Sweet Corn & Quinoa with Honey Lemon Vinaigrette
From Iowa Girl Eats

Ingredients

1 cup dry quinoa
2 cups water
2 Tbs butter
2 green onions, sliced
2 ears sweet corn
salt & pepper

For the Honey Lemon Vinaigrette:

1 Tbs lemon zest
2 Tbs lemon juice
1 garlic clove, minced
1 Tbs honey
1/2 teaspoon salt
1/4 teaspoon pepper

Directions

  1. Rinse quinoa. Combine with water in a saucepan, bring to a boil, then place a lid on top and simmer until the water is absorbed and the quinoa is tender, about 15 minutes.
  2. Meanwhile, combine all the ingredients for the Honey Lemon Vinaigrette in a small bowl and whisk to combine. Set aside.
  3. Melt butter in a large skillet over medium-high heat. Add green onions and sweet corn, season with salt & pepper, then saute until corn is tender, about 3 minutes. Add in cooked quinoa and Honey Lemon Vinaigrette, then toss thoroughly to combine.

 Sweet corn, green onions and buttah! It smelled amazing.

Dump in a massive amount of cooked quinoa.

Devour. This is excellent hot or cold. The lemon vinaigrette reminded me of eating lemon chicken from a Chinese restaurant, and I am NOT kidding, I would choose this over deep-fried fat fast food any day!
